Six million years ago the continents of Africa and Europe collided to close the Strait of Gibralter. Starved of water, the Mediterranean Sea evaporated to form a vast desert. The legacy of this vanished ocean? A million years' worth of salt deposited in mines half a kilimetre beneath the island of Sicily.
